Do the Oscars make you feel like you are in “La, La, Land”? Whether you watch the Oscars or not, you can still eat like a movie star. “Chicken Oscar” is an elegant, but easy meal to make and serve. You can make your own Hollandaise Sauce, but I am all about taking short cuts if the results are the same, so I use Knorr’s packaged Hollandaise Sauce and follow the directions. I actually bought boiled Dungeness crab legs from our local seafood market, because I like the larger pieces of crabmeat in my dish. Serve on black, white, or gold dishes to get that “Oscar Hollywood” theme. Pair with white wine and you will be in “La, La, Land”!

Chicken Oscar Recipe

• 2- boneless, skinless chicken breasts; thinly cut or pounded thin
• Salt & Pepper to taste
• 2- tablespoons real butter or olive oil
• ½ cup crabmeat
• 4-6 fresh asparagus spears, cooked
• 1-pkg Hollandaise sauce mix

1. Heat butter or olive oil in a heavy skillet. Season chicken breasts when butter stops foaming, add chicken and cook 3-4 minutes per side, until golden brown. Remove from heat.
2. As chicken is cooking, prepare Hollandaise sauce and keep warm.
3. Steam asparagus for 5-8 minutes, until tender.
4. To serve, place cooked chicken breasts on plate, top with crabmeat and 2-3 asparagus spears. Spoon Hollandaise sauce over dish and serve.
