What a beautiful weekend for the Memorial Day holidays! One thing is for sure, we had sunshine!
I make a punch recipe that is enjoyed by all ages. The punch is perfect for summer time activities.
Pineapple Lemonade is based on Countrytime
lemonade mix!
Pineapple Lemonade
1 cup Countrytime Lemonade Mix
3 cups Cold water
1 can of chilled pineapple juice (46 0z)
2 cans of Sprite
Mix of fruit: peaches, pineapple, strawberries, cherries etc
Mix everything together and freeze. Serve slushy!
The Pineapple Lemonade is a great adult beverage. Substitute rum for water.
I make an ice ring of every kind of fruit I have using part of the punch juice for the ring. The ring keeps the punch cool through out the day and the dissolved fruits are delicious!
The punch is a hit at any summer party I host. My friend Robin Naquin gave me this awesome drink.
Another recipe I made this weekend, a stand-by I use often and everyone loves, is Peach Cobbler
Peach Cobbler
1 stick butter
3/4 cup self-rising flour
Dash of salt
2 cups sugar
2 cups sliced peaches (fresh or canned drained)
3/4 cup milk
(Sometimes I add cherries that have been drained)
Mix peaches with 1 cup of the sugar. Melt butter in the 9 X 13 baking dish you will use to bake your cobbler. Blend remains cup of sugar, flour, salt, and milk. Pour over the melted butter. Do not sire! Put peaches on top. Bake for 1 hour at 350 degrees or until crust is golden brown. The batter will rise during baking.
