“Irish” I had a Rueben sandwich with Sauerkraut and Thousand Island dressing! Or even a Corned Beef Brisket and Cabbage with Irish Soda Bread! While Americans are celebrating St.Patrick’s Day with everything green(including beverages)and pretending we are Irish for one day,traditional Irish foods are quite different. Spring lamb season is in full swing,so they serve lamb or fish. Regardless of where you are celebrating and what you are eating for St. Paddy’s Day,I hope you find it “Magically Delicious”!
Corned Beef and Cabbage
1-3-4lbs corned beef brisket with seasoning pack
4-red potatoes,quartered
4-carrots,cut in 1″ pieces
1-onion,quartered
1-can beer
Water
4-wedges cabbage
Put potatoes,carrots,and onions in a crockpot. Add brisket and seasonings,pour beer and enough water to cover brisket and vegetables.
Cover and cook on low 10-12 hours.
Remove brisket and add cabbage wedges to cooker,cook on high 30-45 minutes or until cabbage is done.
To serve,cut corned beef against the grain and serve with vegetables.
