JACKSON, Miss. – The latest episode of the Mississippi Department of Agriculture and Commerce’s (MDAC) Freshly Picked podcast featuring special guests and award-winning chefs Nick Wallace of Nick Wallace Culinary and Tyler Alford of Eudora’s Mississippi Brasserie airs today at 9:30 a.m.
Within this episode, these guests hold food-filled conversations with Host Claude Nash on a multitude of topics from personal stories of family and home to trade secrets in the restaurant business. Wallace is a “Chopped” winner, “Top Chef” finalist and was named Best Chef of Mississippi in 2020. He is also the founder and owner of Nick Wallace Culinary, Nissan Cafe by Nick Wallace, Nick Wallace Catering and the Non-Profit Creativity Kitchen. Wallace grew up on a farm in Edwards, Miss., where he learned to create foods from what was available in his immediate environment. His passion to share Mississippi’s unique culture and flavors is apparent with every dish served in his restaurant.
Similarly, Alford hopes to further the legacy of Mississippi and Jackson’s restaurant culture after a decades-long career working at award-winning restaurants around the country. He also served as vice president of operations and beverage director for Tupelo Honey before starting Eudora’s Mississippi Brasserie in Jackson. The Southern and French-style restaurant was soon named Best New Restaurant of 2023 in Mississippi by The Local Palate. Alford credits one of his most popular recipes at Eudora’s to his grandmother, “Agoo.” Agoo’s buttermilk biscuits have become a staple menu item and are always served with fresh honey. Both chefs go on to talk about the importance of using local ingredients in their cuisine and cocktails, and they discuss their favorite holiday recipes and traditions.
