Not too Hot, Not too Cold!
It’s just right…for soup that is! One of my favorites soups is Creamy Tomato Basil Soup. Served with a Homemade Pimento & Cheese Grilled Sandwich this soup is truly just right!

January is National Soup Month, so here’s a little soup trivia for the readers.

1. The earliest evidence of soup is from 6000 B.C.
2. The women in the French court of Louis XI ate only soup because they believed chewing caused wrinkles!
3.Frank Sinatra always asked for chicken and rice soup before each performance, because he said it cleared his mind and his throat.
4.Americans eat more than 10 billion bowls of soup each year.
5. Women are twice as likely to order soup for lunch as men.
6. When Andy Warhol was once asked why he painted the iconic soup cans, he said: “I used to have the same (Campbell’s soup) lunch every day for 20 years.”

Creamy Tomato Basil Soup
Ingredients
• 1 medium onion, finely chopped
• 3 tablespoons butter
• 2 28 oz. cans of diced tomatoes
• 2 tablespoons of flour
• 2 cups chicken broth
• 1 cup heavy cream, room temperature
• Salt and pepper to taste
• Basil to taste (fresh is best)
• Sugar, as needed to cut the bitterness of the tomatoes

Preparation
1) Heat butter in soup pot on medium low heat.
2) Add onion, sprinkle with salt, sauté until onions are soft.
3) Add tomatoes with liquid.
4) Turn up heat to medium high. Cook until most of the liquid is evaporated.
5) Reduce heat and add flour. Mix well to get rid of lumps and stir constantly for 2 minutes.
6) Add chicken broth; cook until soup is hot, not boiling. Stirring frequently.
7) Use an immersion blender to blend soup until it’s smooth in texture with no lumps. (You can use a food processor for this step)
8) Add some of the hot soup to the cream. Mix well, then pour cream mix into soup.
9) Add Basil and cook until soup is at desired thickness.
