One thing  for sure, I am not known for my cooking.  I can meet and greet…but when it comes to cooking, I am way behind the norm.  I do have a few dishes I can prepare.  Most of the time, when my children come home to visit, they know I will be preparing 1 of about 5 things.  Homemade vegetable soup is a standard.  My oldest granddaughter, Larkin, loves my soup which of course thrills me to death!

One time when she was visiting she stated she wanted to write down my recipe.  She was just learning cursive.  She wrote the recipe in cursive…and it is hysterical.  I received a text from her mother Carolyn this morning asking for the recipe because she just couldn’t quite read how to make the soup.

The bottom of the recipe is in my pitiful handwriting!

I thought ya’ll might enjoy seeing what she wrote.  I am sharing the soup recipe. I am sure each of you have a special family recipe that is every bit as good as mine!

Homemade Vegetable/Beef Soup

2 lbs ground chuck

1 small onion (chopped)

1 can whole corn

1 pkg frozen soup vegetable mix (in the frozen food area)

3-5 red potatoes (use at least 5 if real small—if you like a lot of potato) cubed

2 cans tomato sauce

1 can Italian stewed tomatoes

1 can tomato paste

1 can diced tomatoes

Salt, pepper, Tony’s, garlic, —any spice you like

 

Brown and drain well meat and onion

 

Add all ingredients

 

On the tomato cans—use the cans to add water to the mixture.  You will have to judge on the water…I usually add 1 can of water for every “tomato” can I used

 

Cook uncovered for at least an hour.

 

Let the soup mixture come to a rolling boil then turn to a simmer.  I have been known to cook all afternoon on low heat.
