I don’t cook nearly as much as I used to. When you live alone, preparing a big meal just isn’t very exciting. It’s hard to get motivated to cook for just one person!

But baking…now that’s another story.

Over the weekend, I  baked a Pecan Cobbler. Mercy! It was fine! Warm, rich, buttery, and filled with pecans—it was one of those desserts that makes you want to sit down  and savor every bite.

I decided this recipe was just too good to keep to myself, so I’m sharing it with my MageeNews family. I hope you’ll take a little time to bake this cobbler for your family. Whether it’s Sunday dinner, a church fellowship, or just because, I have a feeling everyone will be asking for another helping.

PECAN COBBLER

 

6 tablespoon butter no substitutions

2 cups pecans

1 and 1/2 cup self-rising flour

1 and 1/2 cup granulated sugar

2/3 cup milk

1 teaspoon vanilla

1 and 1/2 cup packed light brown sugar

1 and 1/2 cup hot water

Instructions

Preheat oven to 350 degrees.

Add butter to a 9×13 inch cake pan or casserole dish and melt in the oven.

Once butter is melted, sprinkle the pecans over butter.

In a bowl, mix flour, sugar, milk and vanilla. Stir to combine, but don’t over-mix.

Pour batter over butter and pecans, do not mix.

Sprinkle brown sugar evenly over batter, do not stir.

Carefully pour the hot water over the mixture; do not stir.

Bake 30 to 35 minutes or until golden brown
